<p>ORGANIC (NON-CERTIFIED) / NATURAL</p><p>To make this wine, Diego harvests his most premium old-vine Mencía grapes from a single, high-altitude vineyard, which are fermented with ambient yeasts in large chestnut barrels, where the wine also then ages for almost a year. The result is a wine with a beautiful aromatic elegance to it, showing aromas of cranberry, pomegranate and red cherry, along with delicate floral roses and violets and an underlying hint of cracked black pepper. The altitude lends a nice acidity to the wine, and the vineyard site adds bags of stoney minerality, along with a slightly wild funkiness. A great gastronomic wine, which will pair wonderfully with charcuterie, red meats or Iberian pork. </p><p>Heavy metal fan Diego Losada has gained a reputation for his rebellious and anarchical approach to life and wine. All his vines are over 50 years old, and he opts to interfere with them as little as possible, preferring biodynamic preparations over the use of chemical treatments and fertilisers.
