<p>ORGANIC / NATURAL</p><p>Spicy Ploussard from a place where vine and terroir find absolute synergy that is perfectly showcased in this wine. Manual harvesting is followed by spontaneous semi-carbonic maceration, and 12 months ageing in the bottle. Young and fragrant, it is almost translucent in the glass. Plenty of red berries, currants, minerals, leather, and a touch of spicy cinnamon. The palate is juicy, light, and the tannins are soft and pleasant.</p><p>Tony Bornard is the son of renowned (and now retired) producer Philippe Bornard. He struck out on his own in 2013, then merged his estate with his father’s in 2017, bringing him to 11.5 hectares of land in the town of Pupillin in the Jura region. The wines span two appellations, Arbois-Pupillin and Côtes du Jura, but Tony’s plan for the next few years is to remove his wines from the appellations to allow him more freedom in his process.
