<p>:Intense ruby red, full and very pleasing to the palate. Light balsamic notes of rosemary and thyme. Certainly an important read wine and particularly suitable for roast meats, game and spicy cheeses.Grape variety:Cabernet Sauvignon – South Tyrol DOC RiservaProduction area:Cornaiano, Cortaccia. The grapes come partly from the hillside vineyards of Cornaiano at an altitudes ranging from 450 to 500 m above sea level in well aired vineyards. The area in which they are grown is rich in minerals, the result of ice age sedimentation. And partly from vineyards located in the Bassa Atesina, with its sandy, warm and deep soils. These components are the basis for this Cuvée full of character.Vinification:The grapes are picked by hand and placed in small containers to prevent excess pressure on the grapes. Destemming and slow must fermentation (18-20 days) in stainless steel tanks (gravity-flow). Malolatic fermentation and aging for 20 months in barrique. After the blend 8 months aging in the bottle.Food pairing:Goes well with red meat, game and spicy cheeses.Serving temperature:16 – 18°C.Ageing potential:more than 10 years.Bottle to:750 ml – 75 cl – 0,75 lt.Allergens:wine can contain sulphites.Producer:Cantina GirlanThe Cantina Girlan was founded in 1923 in an ancient farmstead from the XVI century. Back then 23 winegrowers laid the foundation stones of what was later to become the winery we see today. The walls, steeped in ancient tradition, and the labyrinthine corridors of the cellar harbour the secrets of state-of-the-art winemaking technology and hold the ideal conditions for ageing our wines. In 2010, work was started to modernize the cellar and bring it into line with modern technical standards.Today, about 200 greatly committed and motivated winegrowers and their families farm an area covering about 220 hectares of vineyards in the best production areas of Oltradige and Bassa Atesina. Our enologist, Gerhard Kofler, keeps in close personal contact with the winegrowers and provides his professional advice during the growing season. This beneficial exchange of expertise sets the foundations for producing highest quality wines.Our tenetsWe pursue the following main objectives: we seek, on one hand, to showcase and promote the historic local grape varieties and on the other, to create impressive characterful wines using international grape varieties yet keeping them closely connected to the land.
