<p>:The Turmhof Cabernet Sauvignon is garnet-red in color and has a fine bouquet of blackcurrants, blackberries and black pepper. It is full and expansive on the palate with well integrated tannins that provide strength and structure. The rich, full body with its good balance between ripe fruit and tannins emphasizes the harmonious and lasting finish.Grape variety:Cabernet Sauvignon – South Tyrol DOCProduction area:Southeast-facing hillside vineyards in Cortaccia (230 – 320 m a.s.l. / 754 – 1,049 feet).Vinification:Fermentation on the skins in concrete vats is followed by malolactic fermentation and aging for ten months in barrique. After blending, the assemblage spends another two more months in concrete vats. Today Christof and his wife Sabine stand behind the name Castel Turmhof winery. Their aim is to blend the traditions of many years with new and innovative developments. Thus, the preservation of the character of the grape varieties, and of the high quality of the grapes themselves, remain the basic principle of the work in the vineyards and the cellars. Altogether 25 hectares of vines are owned and cultivated by the Tiefenbrunner family. They also purchase grapes from surrounding vineyards with a total cultivated area of 40 hectares.
