<p>ORGANIC / VEGAN / LOW SULPHITE</p><p>Fruit-forward, with floral notes and a hint of spice leading up to sweet notes of sugared almond. In the mouth it is dry with balanced tannins and a pleasant acidity. </p><p>Grapes are harvested manually for this one, and go through whole-bunch carbonic maceration. After that, they are fermented with natural yeast and left to rest on their lees for six months. Second fermentation happens in the bottle with no filtration or fining and no added sulphur</p><p>Situated in the Treviso province, Casa Belfi does everything naturally and organically using biodynamic principles as well. The philosophy behind the project is the respect of natural processes and traditions like ageing in amphorae and bottling according to Maria Thun Calendar.
