<p>Casale del Giglio PETIT VERDOT ROSSO LAZIO IGT/IGP 2020</p><p>Pure Petit Verdot, from very ripe grapes.The red vinification is partly carried out with a submerged cap to extract the sweeter tannins and partly with punching down to obtain a good extraction of the colour.Fermentation continues with a submerged cap for 15 days at a temperature varying between 26-28°C.During the first phases of maceration, “délestages”* are carried out in order to make the tannins softer and the color more stable.After racking, the malolactic fermentation begins, carried out partly in stainless steel and partly in wood.Aging in barriques for 8–12 months and 6 months in the bottle.</p><p>*Délestage: Red winemaking technique which involves the partial drawing off of the fermenting must. It consists of transferring part of the fermenting must into another tank with subsequent reintroduction of the same from above into the starting winemaker, with the aim of oxygenating the fermenting wine and dispersing the pomace evenly in the tank, thus facilitating a better transfer of anthocyanins (color) and polyphenols (tannins) from the skins to the must.</p><p>Ruby-purple colour; intense and persistent aromas of small red fruits, cherries and vegetables, such as myrtle and juniper.Beautiful roundness in the mouth, due to soft and velvety tannins, with an elegant structure.Final with notes of white pepper and spices. </p>
