<p> Assemblage 2012 by Bruno Paillard is obtained from the grapes of the eight best crus in the heart of Champagne. “Assemblage 2012” by Bruno Paillard is elaborated exclusively with the first pressings, the purest. This cuvée is left to age in the cellars of the maison for eight years, of which at least one rest period following disgorgement. The dosage is 4.5g/l. </p><p><p> I wait </p><p> Golden yellow colour, persistent and delicate effervescence. </p></p><p> Nose </p><p> The nose combines fragrances of fruits (cherry, white peach), dried figs, honey and fresh ginger with intense notes of white flowers (begonia). Aeration reveals aromas of cocoa and ash. </p><p><p> Mouth </p><p> Lively and precise, the attack precedes a mouth faithful to the nose, which seduces with its greed, density and refreshing and persistent salinity. </p></p><p> Pairings </p><p> “Assemblage 2012” by Bruno Paillard pairs perfectly with fish dishes (red mullet, monkfish) or meat, such as typical French dishes based on lamb, pigeon or quail, or even with spicy dishes. </p><p>
