<p>A classic Islay Single Malt profile from a secret distillery, bottled strong and pure.. </p><p>The premiss of <em>Chapter 7 Whisky</em> is simple — <em>each cask of Whisky is unique</em>. The wood, age, temperature, its location in the rick-house… everything tells its own story. Large Scotch producers <em>marry casks in large vats </em>before bottling so that the master blender can try to make them all taste the same. The folks at Chapter 7 Whisky think that’s a shame.</p><p>Chapter 7 is the brain-child of <em>Selim Evin</em>. He thinks that each cask should tell its own unique tale, so he travels to Scotland and Ireland to <em>hand-select single casks </em>from the inventories of the world’s greatest distilleries. Then he <em>custom bottles</em> each one with its own story. How many bottles you ask? Well, until the barrel is empty.</p><p><em>Chapter 7 Chronicle 8 Year Old 2011</em> is supposed to be a “Secret.” And the folks at Chapter 7 will tell us a TON of info about these casks… everything EXCEPT the <em>source distillery</em>. For example, they’ll tell us that this Chronicle release is comprised of three <em>ex-Bourbon casks</em> that were distilled in 2011, aged five years, then vatted, and re-racked to age another three years for a total of eight. But a<em> handful of folks</em> have tasted a drop or two and we all have our guesses. The most common guess is that the casks come from the <em>Caol Ila Distillery</em>, but that’s just an educated guess. What really matters is the taste, and if you love <em>Islay drams</em> you WILL love this one a LOT at 49.2% ABV.</p><p><u>Smartass Corner:</u><em>Chapter 7 has organized their releases into three categories. “Monologues” are single cask releases with a strictly limited quantity. “Anecdotes” are small batch or select blends that cannot be reproduced. Finally, “Chronicles” are small batch editions that are reproducible in limited releases.</em></p>
