Potential ageing: 20 years.Critics’ Tasting Notes:”Cabernet Franc, used to be in the Saumur AOC. Organic, biodynamic and vegan.Very polished and fragrant. Edgy acidity – rather sophisticated. Bone-dry finish. Very appetising and still quite youthful. Long” Drink 2023-202816.5/20 points, Jancis Robinson, JancisRobinson.com, November 2023″Well crafted, with a briary undertow carrying the damson plum and wild cherry fruit, all followed by black olive tapenade, black pepper and sweet tobacco notes on the long finish.”90/100 points, WINE ENTHUSIAST, December 2024Benedictine monks planted the first vines in Fosse-Sèche more than 800 years ago. In 1998, the Piré family, originally from Belgium but who most recently spent several decades making wine in Madagascar, purchased the 16 hectares of vines and medieval chateau. Today, the quality-minded estate is run by twins Guillaume and Adrien. Using only organic and biodynamic techniques, they believe in low yields, late harvesting and picking only top quality fruit. Under the watchful supervision of Guillaume in the cellar, Château de Fosse-Sèche produces wines that are elegant, beautifully balanced with high concentration and depth.Château de Fosse-Sèche Eolithe Saumur Rouge is a red wine made mainly with Cabernet Franc plus a little Cabernet Sauvignon. It is produced by Château de Fosse-Sèche and belongs to the AOC Saumur Rouge.Grown on a stony Jurassic plateau of flint with gravel and some clay, but free of lime so that soil allows for deep root growth. Aged on the lees in old beer transportation tank for about 21 months. Offers a quintessential expression of the estate`s unique Jurassic terroir. Its bouquet contains notes of mint, minerals and smoke; on the palate, it`s full of vibrant red fruit, dusty tannins, and a pleasing mineral finish.Good enough for Michelin 3* restaurants!Chateau de Fosse Seche, Eolithe,Saumur Rouge, France, 2020</p>
