Since <em>1837</em>, to be precise, when<em> Augustin Vallet</em> founded the vineyard. Then, it was his son, Pierre, who took over the 90-hectare estate in the Grand Champagne and Petite Champagne regions in France. Today, it’s Louis, Michel, and Laurent Vallet who are running things over there. Their style is never blending the two regions in their Cognacs. Instead, they prefer to offer you each region individually with all its pure flavors. They also <em>age their Cognacs twice as long as the law</em> requires them to. And, they use a unique faibles technique to proof their Cognac. The Vallet family has almost <em>200 years of Cognac-making experience </em>and you can definitely taste that in their Cognacs.</p><p><em>Chateau de Montifaud XO Cognac</em> is a light and fresh Extra Old Cognac. It’s made with Eaux-de-vie in this prestigious blend are on average around<em> 28 to 30 years old. </em>Some of them were distilled back in 1963, 1965, and 1967. The blend is first aged in red oak barrels and then a second time in old barrels. Expect fruity aromas and slightly spicy flavors on the fresh, well-rounded, and <em>full-bodied palate.</em> Rich Cognacs like this go very well with rich desserts or old cheeses. Just saying.</p>
