<p>Our signature Hambledon Classic Cuvée is produced exclusively from our own estate on the South East facing chalk slopes of Windmill Down, in the historic village of Hambledon.</p><p>Hambledon Classic Cuvée is blended to be the finest expression of our special terroir, using the classic Champagne grape varieties of Chardonnay, Pinot Noir and Pinot Meunier. The aim is to capture the vivacity that our chalky soil brings and align it with the apple-fresh energy that marks the best of English Sparkling Wine. Chardonnay is this wine’s most important component and its creamy character, allied with notes of ripe apricot and crisp pear, is at its heart, and it is complemented by gentle soft red fruit notes from Pinot Noir and a subtle savoury edge from Pinot Meunier. We aim to age the wine for at least three years in the bottle in our cellars before release, and this develops intriguing nutty and brioche notes from its contact with the lees and gives more complexity. The wine is always quite dry, so as not to mask its purity and allow the heart of Hambledon to sing.</p>
