Crafted from a base of English Bacchus wine and a blend of botanicals, including oyster shells, olive leaf, and zesty Amalfi lemon, along with locally foraged coastal herbs like rock samphire, sea purslane, and salty fingers. Best savoured simply over ice to get the oyster-like minerality and crispness, or as a vibrant addition to classic vodka martinis, whether dirty or dry. </p><p>Vault Aperitivo is a contemporary distillery specialising in vermouths and botanical aperitif-driven spirits. Originally established in 2018 by founders Dan and Sharon Joines within an Italian restaurant in London, the goal was to bring a European-style authentic aperitivo experience to the UK. The team use the very best British ingredients – from foraging wild herbs and seaweed from the coast to sourcing niche herb plots from local farmers – to infuse their drinks, and make all the vermouths with British wine.
