The Ancestral honors the origins of the style, the ancient process, the people producing it, and the region of <em>Oaxaca</em>. Made in a single village, the production involved<em> no machines or automation</em>, just love, sweat, tears, and a highly-seasoned Mezcal Master to adjust the important details of the process: the hand-mashing of the <em>100% Papalome Maguey</em> using a wooden stick, the slow fermentation in an open leather vat, and the distillation in clay pots.
