<p> Cryfus 60 Edition Rosé Millesimato </p><p> Sparkling wine with the Charmat method, it has flashes of violet, elegant, fine-grained perlage, an intense raspberry aroma. The flavor is dry with balanced and harmonious acidity. Excellent on shellfish and fresh cheeses. </p><p><p> Classification: Cryfus 60 edition Castel del Monte VSQDOP Rosé Extra Dry Millesimato</p><p> Grapes: 100% Bombino Nero. </p><p> Production area: Territory of Ruvo on the border with the municipality of Ruvo di Puglia.</p><p> Training system: High espalier with a density of 3,000 vines per hectare.</p><p> Harvest period: Early September. </p><p> Vinification: The grapes, as soon as they are harvested, are cooled and remain in contact with the skins for 4/6 hours to extract aromas and colour. They are then subjected to soft pressing and the must obtained is decanted and filtered before being brought to a temperature of zero degrees centigrade. It is then loaded into an autoclave where it undergoes a single fermentation. It remains on the lees for 60 to 90 days before moving on to isobaric bottling. </p><p> Organoleptic notes: Bright rose petals veil the glass. The lively effervescence recalls fragrant wild strawberries, raspberries and pomegranates. The structure is cheerful and the freshness is rich.
