Made by the Method Ancestrale (bear with us here), it means the resulting wine is lightly sparkling, low in alcohol, with no added sulphites and a slightly cloudy texture. It’s made by putting a young wine in the bottle earlier than usual and letting the fermentation continue in the bottle. As usual Davenport has created a masterpiece with this Pet Nat.
