<p>Glorious aged Colombian Gin.</p><p>Every good story starts with a journey and a discovery. Years ago, <em>Dario Parra</em>, former boss of <em>Dictador Rum</em>, visited the United Kingdom and fell in love with their national Spirit, <em>Gin</em>. He decided Colombia should have <em>its own Gin</em> and they should also age it. Now, barrel-aged Gins aren’t a new thing. Distillers stored it in wooden barrels because it was a more cost-effective way of moving it around, maturing the thing in the process. But nowadays, Gins usually aren’t aged, so it’s a <em>wonderful twist</em> to the classic drink. Mr. Parra tinkered around and created <em>Ortodoxy</em>, using barrels that used to hold Rum (working in a Rum distillery helped). He selfishly produced Ortodoxy for his <em>own consumption</em> for years. But luckily, the delightful crystal clear potion was made <em>available to everyone</em>.</p><p>One of the main deviations for <em>Ortodoxy Gin</em> is that it’s base Spirit is cane, and each botanical is distilled separately before its blended. Then, they mature the concoction in ex-Rum oak barrels for 35 weeks before they filter it. The <em>fantastic formula</em> of berries, peels, spices, roots and botanicals (angelica, cinnamon, juniper and pepper) creates a truly unique flavor profile. It won <em>Gold </em>thrice in Los Angeles (twice in 2016 and once in 2017). Ortodoxy Gin is like a classy gentleman who got a modern makeover and a flashy earring.</p>
