<p>ORGANIC / NATURAL</p><p>100% Ploussard from vines 45 to 80 years old in the mass selection, organically grown in a place called “Les Chambines”. Manual harvesting is followed by spontaneous fermentation and 12 months ageing in large oak barrels. Plenty of dried red cherry, blueberry, violet, geraniums and sweet spice on the nose. The palate is juicy, mineral and earthy, with dried red fruits again, and white pepper, with medium body and acidity.</p><p>Tony Bornard is the son of renowned (and now retired) producer Philippe Bornard. He struck out on his own in 2013, then merged his estate with his father’s in 2017, bringing him to 11.5 hectares of land in the town of Pupillin in the Jura region. The wines span two appellations, Arbois-Pupillin and Côtes du Jura, but Tony’s plan for the next few years is to remove his wines from the appellations to allow him more freedom in his process.
