<p>This Jura white is more avant-garde – a Chardonnay from cool, calcareous soils with a reductive smoky nose, stone-fruit and white-flower aromatics and a brisk acidity. There’s plenty of strong minerality, and a slightly wild character. It’s less classical elegant Burgundian and more exciting alive.</p><p>Fabrice Dodane studied enology in Beaune and worked at a Pupillin cooperative before joining Domaine de Saint Pierre as manager in 1989. He took full control in 2011 after the owner’s passing. Based in Matheny, the 6ha estate spans Arbois and Côtes du Jura AOCs, with limestone and marl soils. Certified organic in 2012, all wines ferment with native yeasts in tanks or neutral barrels.
