<p>Domaine la Cabotte Côtes du Rhône Colline Blanc 2022</p><p>Yield: 39 hl/haProduction: 30 000 bouteilles </p><p>Tasting and pairingsIt is a dry wine, the nose is discreet and elegant, it expresses complex and subtle aromas, a mixture of pear flowers, white peaches, apricots and nutmeg.On the palate it is rich, unctuous and tense, expressing avery nice minerality, very long and airy at the end of the blocked. To be consumed as an aperitif, with white meats, on fish or shellfish.</p><p>CultivationTo express all the peculiarities of our terroir and the typical nature of our vineyard (45ha of estate in a single plot of which 30 hectares of vineyard), we maintain a harmonious ecological balance by respecting the natural cycles of the earth to constantly regenerate and renew the soil. This is the basis of our commitment to organic and biodynamic viticulture.</p><p>TerroirThe terroir of our Côtes du Rhône Villages Blanc is made up of calcareous sandstones dating back to the Upper Cretaceous at the end of the Secondary Era. These stony clay-sandy soils facilitate good rooting and allow a balanced water regime. The surface texture of this terroir has a high calorific value linked to the marked stoniness. All these particularities, combined with a south/south-east exposure, contribute to a low production of the plant, to a slow and regular maturation, a promise of optimal concentration and maturity of the berries.</p><p>Vinification and refinementThe grapes are harvested very early in the morning to avoid the extreme heat of the day. Then the grapes are pressed slowly. After cold decantation for 72 hours, the must ferments in 250 to 500L jars. Fermentation continues for several weeks. At the end of fermentation, the coarse lees are eliminated and refinement can begin on the fine lees. The refinement continues for approximately ten months in the winemaking vessel.</p>
