<p>ORGANIC/ NATURAL / BIODYNAMIC / LOW SULPHITE/ VEGAN</p><p>Juicy and deep, this is a lovely example of a natural, clean white Bourgogne. Strawy yellow in the glass, it opens up to notes of citrus, honey blossom, chamomile and yellow apple, with just a hint of nutty smokiness. The palate is smooth and structured, with more lemon, minerals, and a long, fresh finish. The grapes are harvested manually and ferment with indigenous yeast in whole clusters. After that, they rest on their lees in oak barrels for a short period. There’s no filtration, no fining and no added sulphur, making for the best showcase of its terroir. </p><p>Renaud Boyer, originally from Meursault trained to be an engineer before switching careers and becoming a vigneron of land in Saint Romain. An organics enthusiast who had been working the vines free of chemicals since the 1980’s and has now converted to biodynamic practices.
