The use of direct steam at low temperature (just over 100°), blown into the base of the stills, makes it possible to extract the volatile components from the pomace without damaging them, especially the aromatic ones. After in-depth selections to choose the intended batches, aging follows in ancient oak barrels, a wood that releases, even if reused, its characteristic amber color. A blend of grappas is then made with aging for at least 18 months, some younger, others aged in wood for a few years. This is always followed by careful refinement in stainless steel tanks.</p></p><p> Amber in colour, it fascinates with its determined and sincere aromas.
