<p>Dominio de Requena was founded by Ana Suria and Vicente García – “the Godfather of Valencian Cava” – in 1981, although it can trace its roots back to the early 19th century. Located in the Las Cabrillas mountains, approximately 60km inland, the estate’s south-facing vineyards are planted at high elevations (700m) around the bodega.</p><p>Among the first growers in the region to use organic methods to farm his land and an exemplar for sustainability and biodiversity, Vicente tends 12ha of Macabeo, Parellada, Xarel-lo, Bobal, Chardonnay, and Garnacha. Grapes are harvested by hand at night to preserve their freshness before being gently pressed and fermented in stainless steel.</p><p>A driving force for the region’s inclusion within the Cava DO, Vicente produces a range of excellent value, traditional method sparkling wines, as well as a small number of white and red cuvées made from local varieties. </p><p>Made from 75% Macabeo and 25% Parellada, Dominio de Requena’s Brut Nature Cava offers a delicate citrus and floral character layered with elegant toasty nuances – the result of spending 12 months on lees. </p>
