<p>“The collaboration culminated in August, on a sweltering day beneath the Hudson Valley sun. Together, we harvested and then juiced the sorghum just steps from where it was grown. Using large knives, we chopped the canes and stripped away the leaves—too grassy for our needs—before pressing the stalks with a repurposed sugar press wheeled out onto the fields themselves.</p><p>We had sent up two stainless steel totes: one filled with over 20 botanicals we’d previously macerated and another containing distillations of more than 30 herbs. The freshly pressed sorghum juice was added directly into those vessels, then shipped back down to our Brooklyn distillery.</p><p>From there, the process became its own living recipe. We layered in additional macerations and distillations: lemon balm, génépi flowers, lemon verbena, hyssop, and more—each step then tested, tasted, and refined across many months. This is an alpine spirit reimagined: grounded in herbal tradition, but made to feel bright, drinkable, and very alive.”</p><p> —Forthave Spirits</p>
