<p>Fox & Fox Tradition Blanc de Noirs 2014 (75cl) Viticulture: The climate here is similar to Champagne, allowing for a long,even ripening season. The two vineyards lie on a combination ofancient clay, shale and sandstone. Here Pinot Noir, Pinot Meunier,Chardonnay and Pinot Gris are grown from medium-yieldingBurgundy clones, trained on a double-Guyot trellising system. Thevineyards are worked rigorously by hand with great attention paidto minimising spraying and maximising canopy management andvine nutrition. Winemaking: The fruit is entirely from the Lakestreet vineyard and is wholebunch pressed. The first fermentation occurs in steel tanks, thenthe second fermentation in bottle followed by at least 28 monthson lees. Tasting Note: Impressive, rich, powerful sparkler with layers of ripe, honeyedfruit, notes of nectarine, quince toast and nuts. Great depth andcomplexity.
