<p>From young-star Gaspard Brochet comes this precision-crafted Blanc de Blancs sourced from 1er Cru parcels <em>Les Plantes</em> and <em>Les Prés Mousseux</em> in Écueil. Practicing biodynamics since 2022, the soils here are rich black clay with natural water sources—managed with a strong focus on biodiversity. Native yeast fermentation takes place in small oak barrels, with no fining or filtration. Disgorged Jan 8, 2025 (fruit day, waxing moon) with 1 g/L dosage. 100% Chardonnay. 2,940 bottles produced.</p><p>1 bottle limit per customer. Wine arrives the end of June, 2025. </p>
