<p>:the organoleptic heritage manifests itself in a ruby-garnet red color, with a beautiful clarity. The aromas that range, on an austere base of resin, from violet to dried rose and to the scent of raspberry – prove to be very intense and persistent, of particular finesse, ethereal and broad. The polymorphic taste expresses dynamic vitality in its flavor. Dry and rightly tannic it is warm in body, so much so as to lead, due to its finesse, to the pleasant drink. It bears the name of Cantalupo to identify its origin.Grape variety:100% Nebbiolo – Ghemme DOCGProduction area:Carella, Baraggiola, Valera and Cavenago. The Ghemme DOCG from Cantalupo comes from the Nebbiolo grape, characterized by a hilly terrain, with a soil rich in minerality due to the considerable disintegration of the rocks, and exposed to an altitude of 280 – 310m s.l.m.Vinification:grapes first de-stemmed and then gently pressed. Fermentation at controlled temperature up to 30 ° C. During fermentation two daily pumpings were made until the sugars were completely transformed; a submerged cap maceration followed. In the following spring it was poured into oak barrels, where it spent another 20 months before being bottled. On one side the Alps with the imposing massif of Monte Rosa and Valsesia. On the other side the expanse of the Po Valley with flat horizon and rice fields. In the middle, the moraine, a fascinating triangle of hills that includes so much history and geological heritage. And from these hills, the realm of the roots of Nebbiolo, is born the reality of the old vineyards of Cantalupo. A reality linked to the love of this land and its historic wine, fully aware of its great potential. The estate now has 35 hectares of vineyards.
