<p>Everyone knows the Italians make great Vermouth, and now they make great Gin. </p><p>The Antica Distilleria, located in <em>the hills of Northern Italy, </em>has a long history of producing <em>Grappa and Liqueurs. </em>Founded in the late 1800s, the distillery has seen four generations of <em>the Quaglia family</em> oversee production of <em>authentic, artisan spirits, </em>using traditional methods of production.</p><p><em>Giuseppe Quaglia</em> purchased land for his distillery in 1906, and in 1930, his son Carlo overtook the running of the business and increasing production. In 1967, the third generation of Quaglia began producing single variety Grappa, using the <em>original stills and methods. </em>Today, the distillery is run by the great-grandson of Giuseppe, who believes in applying his family’s traditional production methods to unique, creative offerings, always with their signature natural ingredients.</p><p><em>Gin Del Professore</em> is the Antica Distilleria’s primary Gin offering, made in collaboration with <em>the Jerry Thomas Speakeasy</em> in Rome. There are two very distinct styles of Gin Del Professore; <em>the Monsieur, </em>a traditional style citrus and juniper-heavy Gin, and <em>the Madame, </em>a sweeter style made with cinnamon and vanilla.</p><p>Much like Vermouth, Gin Del Professore is made by blending a juniper distillate into <em>an infusion of herbs and spices</em> in order to develop a deep complexity of aromas. What’s more, <em>the Gin isn’t filtered,</em> and so retains the amber color taken on during botanical infusion.</p>
