There’s a gentle creaminess on the palate balanced by a mineral edge and lively acidity. Elegant but not too serious, it finishes dry and clean with a delicate, toasty note from extended ageing on the lees.</p><h3>About Entre Vinyes winery</h3><p>Entre Vinyes (“Between Vineyards”) is a family producer in Penedès dedicated to organic and biodynamic practices. Created by Maria and Pep, a couple who started from scratch in 2012 after taking over some old vineyards, and have slowly built this project into a successful and experimental winery. Their Mediterranean vineyards embrace biodiversity and soil vitality without synthetic chemicals.</p><h3>About Cava</h3><p>Cava is Spain’s answer to Champagne: a sparkling wine made using the traditional method, where the second fermentation happens in the bottle. Unlike Champagne, it typically uses native Spanish grapes like Xarel·lo, Macabeo, and Parellada. Cava is known for its crispness, fine bubbles, and excellent value, and when made well (like this one), it offers real depth and elegance.</p><h3>How to pair it</h3><p>This Cava is incredibly food-friendly. Perfect with salty snacks like olives, almonds, and crisps, it also shines alongside seafood, sushi, fried foods, or light tapas. Try it with grilled prawns, manchego cheese, or even a plate of fish and chips. It’s also a great aperitif to kick off any gathering.</p>
