<p>A hand-infused compound Gin from Iceland with a woodsy, herbal profile.</p><p>In 2014, local Icelandic artist <em>Óskar Ericsson</em> decided to create a Gin that reflected the natural botanicals and environment of his home country… something that we could take with him on his fishing trips and into the <em>Icelandic wilderness</em>. To this day he still collects all the local botanicals himself — <em>by hand </em>— during the summer months along the riverbanks where he walks. He infuses his compound Gin and then <em>hand-numbers each bottle</em> of his limited production.</p><p><em>Himbrimi Old Tom Gin</em> is an interesting concoction that Óskar made to be a fishing companion sipper. The base is their signature Himbrimi Gin infused with juniper, wild Arctic thyme, angelica seeds, and lemon zest before being lightly sweetened with <em>honey</em>. Since the infusions are infused rather than distilled, you may see small bits of sediment in the bottle — this is perfectly normal and <em>evidence of the hand-crafted nature of the Spirit</em>. The final Spirit is brought to proof at 40% ABV and has the rich color of Whiskey.</p><p><u>Smartass Corner: </u><em>“Himbrimi” is the Icelandic word for the common loon, and translates literally as “heaven howler.” In England it is called a “diver” because it dives into the water to eat small fish and crustaceans. </em></p>
