<p>The challenge for us when makingHolyrood – Height of Arrows Gin was whether we could make a gin with a whisky maker’s mindset. Whisky has avast array of flavours and we rely on distillers expertise in using just three ingredients, water, malted barley and yeast.In creating Height of Arrows we sought to create a gin that followed the same principle of utilising a few ingredients to achieve an abundance of flavour. Height contains just three ingredients, juniper, Isle of Skye sea salt and natural beeswax.Tasting Notes: On the nose there isabalanced presentation of clean fresh pine & resin coupled with light citrus zest. On the palate, you initially get an oily and mouth coating with juicy and rich orange zest and lemon pith then a bold emergence of black pepper and cardamom, tempered with tapered herbaceous smoothness.
