Chablis is located in the French department of Yonne, whose inhabitants are called “Icaunais”. This white Burgundy is made from 100% Chardonnay. Officially, the wine is called Bourgogne Chardonnay Émotions Minérales, a reference to its minerality. You’ll also taste the distinctive salty flavour of the famous chalky soil. You’ll also discover aromas of wet stones, peach, and lemon. A wonderfully refreshing wine to serve with oysters, shrimp, or other shellfish.
