There is a refreshing acidity on the palate from a semi-carbonic maceration, as well as a distinctive flavour of wild herbs.</p><p>Jurgen Gouws, the producer behind Intellego Wines, is part of the new wave of winemakers in South Africa’s Swartland region, with a philosophy of natural and sustainable production. He aims to create fresh and drinkable wines without heavy extraction of new oak barrels, and his fun and informal bottles and labels reflect his goal of making wines that are approachable and accessible to everyone.
