<p>La Gritona is a woman-led tequila made entirely by hand at Vinos y Licores Azteca (NOM 1533) in the Valle de Guadalupe, Jalisco, under the direction of master distiller Melly Barajas Cárdenas. Crafted from 100% blue Weber agave grown in the region’s iron-rich red soils, the piñas are harvested at full maturity (8–10 years), then roasted in stone ovens for 24 hours and rested for another 24 before being crushed on a roller mill.</p><p>Fermentation proceeds slowly and spontaneously in open-air stainless tanks using wild yeasts, and the spirit is double-distilled in stainless steel stills with copper coils. It rests for 8 months in used American whiskey barrels—never new oak—which lend gentle structure without obscuring the core of bright, vegetal agave character.
