For those looking for a high quality Chardonnay, this punches well above its weight.</p><p>Pinched between the Atlantic and the Mediterranean is the Haute Vallée de l’Aude. The traditional ‘noble’ grape varieties of Chardonnay and Pinot Noir have a natural affinity here. Both varieties benefit from the warm climate combined with high altitude, allowing for slower and longer ripening of the grapes. These ideal growing conditions give this wine concentrated fruit yet refreshing acidity. Made from mostly hand-picked grapes, 20% has been vinified in old oak, imparting texture and body.</p><p>Baked chicken with a creamy sauce, wild mushroom risotto or pasta with clams in white wine.</p>
