<p>ORGANIC </p><p>Cesare and Federica’s Etna Rosso, sourced from 120 to 140(!) year-old organically-grown vines at 800m altitude, embodies the extraordinary volcanic terroir of the region. After destemming, the grapes are gently trodden by foot in traditional vats made of volcanic basalt, after which an open-air fermentation begins. Following this, the wine is transferred into one 300l and five 600l barrels for a total of 16 months. In the glass it has a dark ruby hue, and presents earthy and mineral notes on the nose, reminiscent of wet earth and minerality, leading into an aromatic profile marked by red fruits such as raspberry and cranberry. On the palate it has a medium to full body, with a pleasing tannic grip undercut by a refreshing acidity, and flavours of black cherry, balsamic spices, and a subtle hint of tar – reminiscent of a young Barolo.
