<p>ORGANIC / BIODYNAMIC / VEGAN / NATURAL / LOW SULPHITE</p><p>3 different vintages go into this in order for Viki to meet her growing international demand – mostly the 2019 harvest topped up with the 2018 and 2020. Partially destemmed grapes are fermented with 6-7 days maceration in stainless steel, before maturing in old, large oak barrels to soften the tannins without corrupting the purity of the flavour. The result is a balanced expression of Victoria’s unique terroir, with bags of complexity that unfold and develop as the wine opens up in the glass. </p><p>La Palma, the northwesternmost Canary Island, is a remarkable island known for its striking altitude variations and diverse geological landscapes, making it a fascinating historic viticultural hotspot. Its isolation has meant that the vineyards were mostly sheltered from the phylloxera infestations that wiped out almost all European vines in the early 20th century, meaning the island has many vines dating back all the way back to the 1800s. Victoria Torres Pecis is now the fifth generation of her family’s winemaking legacy, and maintains 7 hectares of vineyards planted with native Canary Island grape varieties.
