<p> As with many sites that have been famous for great wines for centuries, The name Mount of Olives also refers to a former monastery and a biblical Reference. The fact that the wines from the Mount of Olives always have the densest viscosity and the have the highest proportion of essential oils, the name certainly supported. Located at 80-170m above sea level with up to 65% gradient and clear east-west Orientation in the middle section is the Mount of Olives, our only pure south-facing location on Red slope. Highly fissured with porous and comparatively permeable surface, its red, clayey weathered soils replace the Humus layer, act as a heat storage in summer and always result in physiologically ripe grapes. The wines of the Mount of Olives are powerful and accessible with a generously expansive character. After strict After selection, the grapes are harvested by hand and the must is fermented spontaneously and then carefully matured in 1200 litre wooden barrels. It flows golden yellow into the glass and exudes its rich perfume. The distinctive minerality of the Mount of Olives after wet stones comes largely without any striking fruitiness on the nose. Some citrus, orange oil, mandarin and the white of the peels mix with bitter aromas reminiscent of sage and currant leaves. Overall, our Mount of Olives is often on the herbal side.
