<p>A perfectly-aged solera Rum from the Dominican Republic.</p><p><em>Juanillo Oliver</em> came to Cuba as a member of the Spanish military in the <em>mid-1800s</em>. After his tour of duty ended, he stayed to work in the Rum industry to found <em>Oliver and Oliver</em>. In Cuba’s second war for independence, the plantation and distillery were destroyed. But a century later his <em>great-great-grandson</em> re-founded the family business — this time in the <em>Dominican Republic</em>. To this day they make some of the<em> most sought-after</em> Rums for consumers all over the world. More than twenty years ago they established a new brand name — <em>Opthimus</em> — that would allow them to also collect some of<em> the best</em> Rum distillates from existing distilleries in the Caribbean and Central America to add to their collection.</p><p>Opthimus is the high-end brand for <em>Oliver and Oliver</em>. <em>Opthimus</em><em> Rum 21 Year Old</em> is <em>truly exceptional</em>. It is a <em>100% Dominican Rum</em> aged in the solera method. And as you may remember, that means that it has small amounts of much older Rum mixed in. It is delicate, but full-flavored and well-rounded with dense notes of ripe fruits and tobacco. It goes down like a great Whiskey and is <em>a pleasure to drink</em>.</p>
