<p>Part of Paul Gosset’s seasonal micro-cuvée series, <em>L’Hiver</em> is a sharply chiseled Extra Brut built from cooler-exposed parcels around Aÿ and Mareuil-sur-Aÿ, emphasizing Chardonnay and Pinot Noir in a mineral-first frame. Native-yeast fermentations, restrained oak, and long lees aging shape a wine of wintery precision: citrus oil, crushed chalk, white flowers, and a faint reductive flintiness. The palate is taut and saline, with fine phenolic grip and no dosage to soften the edges. A cerebral, terroir-driven Champagne that captures the crystalline architecture of Gosset’s cold-season expression.</p>
