<p>Mixologist’s favorite Dubliner. </p><p><em>Dublin</em>, the capital of Ireland, used to be the capital of Whiskey as well. Back in the <em>19th</em> century, Irish Whiskey was a global blockbuster, until a series of unfortunate events (war, draught, and unwillingness to modernize) brought us the dawn of Scotch. But Irish Whiskey is back and <em>stronger than ever</em>. Part of the new wave are also <em>Pearse </em>and <em>Deidre Lyons</em>, who set up shop in the Liberties neighborhood of Dublin, right next to the ancient <em>St. James church</em>. The 12th century house of God (where Pearse’s grandfather was also buried) was refurbished and resurrected, serving faithfully now as a house of Spirits.</p><p>Their elegant and rich <em>Distiller’s Choice</em> comes from the distillery’s first core range, primarily designed to be a mixologist’s <em>new best friend</em>. It’s a chic blend of malt and grain Whiskeys (seven of them, to be precise), sourced from all around Ireland. Most of them were matured in ex-Bourbon barrels, while a selection spent some time in Sherry butts. The ingredient Whiskeys are between <em>3 and 9 years old,</em> and while the blend’s nose brings forward oak and fruits, its palate promises opulent flavors of vanilla and caramel. It works <em>fantastically </em>in any cocktail based on Irish Whiskey, especially in the<em> Irish Derby</em> or the <em>Tommy Gun</em>.</p>
