<p>Penderyn’s signature Single Malt aged in ex-Bourbon and rejuvenated oak casks for a smooth, fruit-forward dram. </p><p>Fine Single Malt Whisky had been produced in Wales for centuries, but inexplicably ceased in <em>1894</em>. <em>The Welsh Whisky Company </em>was founded in 2004 to put an end to this Welsh Whisky drought and bring the magic Spirit back to the land of King Arthur. But they decided to do things a bit differently.<em> Dr. David Faraday</em> — grandson of the famous physicist — designed a special pot still that would yield a more pure distillate at a higher ABV. And this single, one-of-a-kind still has a full capacity of <em>only one cask of Spirit per day</em>. Today, these fine blokes produce what they call <em>“the smoothest Whisky on Earth,”</em> including their award-winning range of finished-wood Whiskies, Gin, Vodka, and a Merlyn Welsh Cream Liqueur that will tickle your wizard’s hat.</p><p><em>Penderyn Myth</em> is a part of their Dragon series — as you can no doubt tell from the brilliant red dragon blazoned across the label. This Welsh Single Malt has been matured in a combination of <em>ex-Bourbon casks</em> and <em>rejuvenated oak casks.</em> The signature smoothness comes through the fruit-forward profile. And we count at least <em>six major industry awards</em> to back that statement up — including a <em>Gold Medal </em>and this year’s World Whisky Masters.</p><p><u>Smartass Corner:</u><em>“Rejuvenated” oak casks are technically pre-used. But they have gone through a process to expose new wood. Sometimes by carving grooves in the staves, but more often through the STR process of shaving, toasting, and re-charring.</em></p>
