<p>:This Pinot Bianco is an elegant and distinctly mineral wine, which impresses with a light and bright yellow-green in the glass. The fine and intense bouquet recalls ripe aromatic apples and white flowers and gives off a slight note of flint. On the palate the wine appears full-bodied and creamy, with spicy notes accompanied by a fine mineral acidity. It is striking for the mineral, long-lasting and fruity finish.Grape variety:Pinot Blanc – South Tyrol IGT Weinberg Dolomiten.Production area:The vineyard ” In der Lamm ” is located at approx. 500 meters a.s.l., in the locality of “Weiler Weißhaus” in the municipality of Appiano. The airy hillside location, facing west, is very sun-drenched and allows the grapes to ripen optimally. Moraine soils from the last glaciation period predominate here, mixed with volcanic gravel, rich in porphyry and quartz minerals. In the penumbra of the “Pergl” (pergolas), the Pinot Bianco releases fruity, complex and elegant aromas, which carries the origin of this special location in itself. The old vines, with very deep roots, do not need artificial irrigation. They transport a variety of mineral taste components that make this wine unique. The vines are over 55 years old. Vinification:The Pinot Bianco is produced from a triple selection of well-ripened grapes. A soft pressing and natural clarification of the must by sedimentation is followed by partially spontaneous fermentation, thanks to natural yeasts, in 500 liter oak barrels (Tonneaux). After the malolactic fermentation, the aging takes place for 9 months on the raw lees in barrels, followed by aging in steel vats for 6 months. Very light filtration.Food pairing:This Pinot Bianco is a versatile food companion, particularly suitable with Mediterranean cuisine, sea fish, white meats and savory cheeses.Serving temperature:10 – 12°C.
