Soil: Limestone gravel with clay.Vinification:Fermentation, malolactic fermentation and development of a portion (50%) on the lees in barrique-tonneaux. The remainder is vinified in large oak barrels. After nearly a year, the two wines are combined and mature together in steel tanks for another six months.Food pairing:an exclusive accompaniment, ideal for fish dishes such as tuna carpaccio, octopus on potato and olive tartare, or seafood dishes such as grilled scampi.
