<p>:A ruby-red colour with slight tones of grenadine and an intense and complex bouquet with notes of ripe fruit, cherry and maraschino. A soft and delicate taste with a good fruity tannic framework and persistence. An excellent table wine, perfect for serving with roast meats, game and spicy cheeses.Grape variety:Pinot Noir – South Tyrol DOC RiservaProduction area:On the sunny slopes of Mazon, above Egna, at an altitude of 400 m above sea level, facing south west, the Holzknecht family takes care of the vines at the “Trattmann” farm. The clay and lime soil is ideal for Pinot Nero, giving it a velvety softness and an elegant structure.Vinification:The grapes are picked by hand and placed in small containers to prevent excess pressure on the grapes. Destemming and slow must fermentation (18-20 days) in stainless steel tanks (gravity-flow). Malolatic fermentation and aging for 15 months partly in big wooden barrels (12 hl), partly in barrique and 8 months in the bottle.Food pairing:Goes excellently with all courses. Especially suitable for roasts, game and spicy cheese.Ageing potential:more than 10 years.Serving temperature:14 – 16°C.Bottle to:750 ml – 75 cl – 0,75 lt.Allergens:wine can contain sulphites.Producer:Cantina GirlanThe Cantina Girlan was founded in 1923 in an ancient farmstead from the XVI century. Back then 23 winegrowers laid the foundation stones of what was later to become the winery we see today. The walls, steeped in ancient tradition, and the labyrinthine corridors of the cellar harbour the secrets of state-of-the-art winemaking technology and hold the ideal conditions for ageing our wines. In 2010, work was started to modernize the cellar and bring it into line with modern technical standards.Today, about 200 greatly committed and motivated winegrowers and their families farm an area covering about 220 hectares of vineyards in the best production areas of Oltradige and Bassa Atesina. Our enologist, Gerhard Kofler, keeps in close personal contact with the winegrowers and provides his professional advice during the growing season. This beneficial exchange of expertise sets the foundations for producing highest quality wines.Our tenetsWe pursue the following main objectives: we seek, on one hand, to showcase and promote the historic local grape varieties and on the other, to create impressive characterful wines using international grape varieties yet keeping them closely connected to the land.
