<p>The harvest of the Pinot Noir produced by Kistler Vineyardrs is carried out in the middle of the night, in the dark and, especially, with cool temperatures. The result is fresher grapes that retain their acidity better. It may seem very strange if you don’t know much about wine, but a true connoisseur is aware that grapes are in a different physiological state in the coolness of three in the morning than in the middle of the day.</p><p>The Pinot Noir is fermented spontaneously in open tanks and the must is aged in French oak barrels for a maximum of 18 months.</p><p>In the glass it shows a beautiful ruby red color; the aromas that rise to the nose are intense, characterized by floral and fruity scents of red fruits, with smoky hints. The taste is rich, medium-bodied and rather dry, the perceived acidity is medium-high, with medium tannins and intensity, the fruity hints of plum and currant open to a spicy finish of black pepper.</p><p>A wine that goes perfectly with savory dishes such as polenta with porcini mushrooms, roasted game or Moroccan braised salmon.</p>
