Delicate and well structured, this straightforward and independent Pinot Noir convinces on the palate with present, natural tannins and a surprising freshness and fruit sweetness. Salty, long-lasting and elegant on the finish. A Pinot Noir with a strong expression.Grape varierty:Pinot Noir – South Tyrol Alto Adige IGT Weinberg Dolomiten.Production area:The historic Pinot Noir vineyard at 450 metres above sea level near the Tschindlhof estate, as well as the underlying Pagis vineyard, are among the most valuable terroirs in Appiano. The cool air currents descending from the Mendelberg have a decisive influence on the climate. The loamy soils here are very calcareous and are particularly suitable for Burgundy varieties. The high iron content in the calcareous marl gives the Pinot Noir a slight taste of blood orange, among other things.Vinification:The grapes are selected in several passes. The grapes are destemmed and transported via a chute into a 20 hl. fermentation pot. After several days of pre-crushing, fermentation takes place spontaneously with whole berries thanks to natural yeasts. After about three weeks of maceration with careful manual punching down, the wine is gently pressed and clarified by natural sedimentation. Further ageing takes place for approx. 15 months in new and used 500 lt. oak barrels.Food pairing:A versatile food companion for special moments. Ideal with roasted and grilled red meat, game and aged cheese.Serving temperature:16 – 18°C. In order to develop its full potential, the wine needs time to breathe after opening.Ageing potential:more than 8 years.Bottle to:1500 ml – 150 cl – 1,5 lt.
