Based in cellars in Davayé, Rouve’s winemaking approach is a minimalist one, emphasing freshness and balance in his wines by utilising restricted yields, hand harvesting, slow & moderate pressings, indigenous yeasts and long oak ageing without lees stirring or racking.Coming from a fabulous site on limestone soils at the foot of the Roche de Vergisson, the “Sur la Roche” is one of the 22 recently introduced “Premier Cru” vineyards within the Pouilly-Fuissé appellation.
