<p>ORGANIC / VEGAN / NATURAL / NO ADDED SULPHITES</p><p>A layered and complex Ribolla Gialla; it is macerated on skins for 2-4 months in oak, before being aged for 4 years in cask, after which there is a final 2 year bottle aging! Endlessly complex, the nose has notes of orange marmelade and ginger, as well as honeyed and floral flavours. On the palate the influence of the mineral-rich soil where it grows becomes apparent, as does the tannic structure and fresh acidity to cut through it. There are some yeasty notes, lovely floral and underripe fruit elements, and beautiful depth. This will only improve with age.
