<p>BIODYNAMIC / ORGANIC / VEGAN / LOW SULPHITE</p><p>A stunning skin contact Sauvignon, made partly with botrytised grapes. The nose is honeyed and layered with rich fruits, spice and earth. It undergoes spontaneous fermentation in steel, and malolactic fermentation, creating a structured and complex palate of fresh minerals, savoury notes and some tannin. Not your nan’s Sancerre.</p><p>Sébastien Riffault has become synonymous with the Sancerre region, but not as we traditionally know it. Everything about his wines push way past the boundaries of the region and its old stereotypes – we may never go back! Most fascinating is his risky use of botrytis (noble rot) in many of his wines, something most senior winemakers would never attempt. This adds additional complexity to his already fascinating wines. His family has been making Sancerre for generations, and in 2004 he convinced them to convert to biodynamic practices.
