<p>This bottling comes from 3 hectares of 80-year-old vines, with a focus on preserving the vineyard’s unique character and history. The grapes undergo a partial destemming of up to 20% depending on the vintage. After light crushing, fermentation takes place in large open vats, before it is transferred to large oak barrels for aging, which lasts 14 to 16 months. Displaying a dark ruby-red colour, and a complex bouquet of dark fruits such as blackberry and black cherry, with notes of violets, black pepper and spices. On the palate it is dense and structured, with layers of liquorice spice and savoury black olive tapenade shining through. The outstanding quality on display here contributes to its ability to age exceptionally well – Pierre recommends 6 years in the cellar.</p><p>Pierre Gonon, along with his two sons Jean and Pierre, has transformed the family domaine into the esteemed leading estate of Saint-Joseph. The Domaine’s vines are located in the original heart of St-Joseph in Mauves and Tournon, with additional old vines used in this wine acquired from Raymond Trollat in St Jean de Muzols. They employ sélection massale for their reds, avoiding clones, and utilise horse ploughing whenever possible.
